Fermentation with native and cultured yeast goes for between five and 15 days

crushed red berries and a hint of dried orange peel

with 100% old oak allowing fruit to take the fore

This is a tiny cuvee of just 3000 bottles maximum made just for the francen market and vinified and aged in a brand new stainless steel vat

Dry, fruit driven yet creamy on the palate, finely woven with elegant acidity and mineral extract, very harmonious structure.
